Fresh Pea and Mint Soup with Radishes
- 2 cups vegetable broth
- 2 cups frozen or fresh sweet peas
- 1 cup full-fat coconut milk
- 1 teaspoon honey
- 1 tablespoon olive oil
- ¼ teaspoon sea salt
- Juice of 1 lemon
- ¼ cup fresh mint leaves
- FOR GARNISH
- 4-6 thinly sliced radishes
- Flake salt and cracked black pepper to taste
Place all soup ingredients except mint in a high-speed blender.
Blend, starting at lowest speed and gradually increasing to high, for about 3-5 minutes.
Add mint leaves, reserving 5-6 for garnish, and blend 20-30 additional seconds.
Taste and adjust seasoning as desired.
Serve topped with radishes, fresh mint, salt and pepper to taste and a drizzle of olive oil if desired.
