Serves 6-8
Ingredients
- 2 teaspoons olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 cups diced carrots
- 2 cups diced celery
- 11/2 teaspoons salt
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup green lentils, dry
- 7 cups vegetable broth
- Fresh parsley, for garnish (optional)
Directions
Heat a large pot over medium heat and add olive oil and onion. Cook onion until tender, about 3 minutes. Next add the garlic, carrots, celery and all the spices. Cook vegetable mixture for about 7 minutes, and then add in the lentils and vegetable broth.
Bring soup to a simmer, and simmer until vegetables are cooked through and lentils are done, about 30 minutes. Serve immediately or reheat before serving. Top with fresh parsley if desired.
