Stuffed Avocado

Makes 4 servings

Avocados are such a great foundation for so many recipes. Crack one open and the options are endless. Recipes like this one for stuffed avocado are easy to make and fun to share.

Ingredients

  • 2 avocados
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • ⅓ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup basil

Directions

Slice avocados in half. Remove the pit, then set aside.

Slice cherry tomatoes in half and place in a bowl. Add olive oil, salt and pepper.

Chop basil and combine with tomato mixture. Fill avocado with tomato mixture and serve fresh.
