Smoky-Sweet Trail Mix

Planning a hiking trip can be difficult for those who are gluten-free.

Going on a trip that is a few days long? No problem! Pack non-perishable items that are ready-to-eat like our gluten-free Smoky-Sweet Trail Mix. Store in a tightly sealed container for up to 3 weeks.

Ingredients

  • 4 cups nuts of your choice (we used walnuts, almonds, pistachios)*
  • ¼ cup coconut oil
  • 3 tablespoons honey
  • 2 teaspoons cinnamon
  • 1 teaspoon chili powder
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon granulated garlic
  • 1 teaspoon sea salt

Directions

Preheat oven to 350° F and line a rimmed baking sheet with parchment.

Combine all ingredients in a large bowl and stir well to combine.

Spread evenly on parchment-lined pan and bake on center rack for 15-20 minutes, or until completely dry, stirring once to re-distribute.

Turn off oven and allow mix to set in oven an additional 5 minutes before removing to cool.

Store in a tightly sealed container for up to 3 weeks.

*Note: Soaking nuts in boiling water for 20 minutes then draining them well before using adds crispness to this recipe.
