Smashed Avocado Toast with Hard-Boiled Eggs

Put all those leftover Easter eggs to good use with this recipe for Smashed Avocado Toast with Hard-Boiled Eggs. It’s a perfect delicate starter to an elegant meal.

Ingredients

  • 6 hard-boiled eggs*
  • 2 small avocados
  • 8 slices gluten-free bread
  • 3 medium radishes, thinly sliced
  • 2 small scallions, thinly sliced
  • 1 tablespoon hemp hearts, optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons olive oil

Directions

Peel hard-boiled eggs and slice into thin slices. Cut avocados in half, remove pit, remove the avocado from the skin and place into a medium-sized bowl. Smash the avocado with a fork until just smooth.

Toast the bread right before assembling the toasts. Spread about 1-2 tablespoons of avocado onto each piece of toast and then top with egg slices, radishes and scallions.

Sprinkle each toast with a small amount of hemp hearts, if using, salt and pepper. Drizzle each with about ¼ teaspoon of olive oil.

*To make hard-boiled eggs, place eggs in a large pot and cover with cold water. Place over high heat and bring to a boil. Let eggs boil for 1 minute and then remove from the heat and let sit with the lid on for 12 minutes. Drain water and cover with cold water for about 10 minutes.
