No-Bake Gluten-Free PB&J Balls

Makes 10-12 balls

This recipe for gluten-free PB&J balls is great when you’re looking for a morning post-workout snack or a healthy sweet treat. Not only is it quick and easy, but you can also customize it by adding your favorite mix-ins. No oven is needed for this one, and even the kids can help make them.

Ingredients

  • 1½ cups gluten-free quick oatmeal
  • ½ cup all-natural peanut butter
  • ⅓ cup honey
  • ⅓ cup dried cranberries or raisins
  • ½ dairy-free chocolate bar chopped into small pieces, optional (also can substitute any other dried fruit or nuts)

Directions

Mix all the ingredients together until well combined. Roll into 1-inch balls to make about 10 to 12. Store at room temperature.

Nutrition Analysis: 220 cal, 8 g fat, 0 mg chol, 135 mg sodium, 32 g carbs, 1 g fiber, 13 g sugar, 6 g protein.
