As a chef, I sell a lot of finger food and catering platters during the holidays. One of the most popular items for cocktail hours or to accompany light refreshments, pinwheels are small colorful slices of classic cold cut wraps. This version removes the wrap, making it simple to keep gluten free. Plus, it is much more colorful.
- 1/4 pound sliced smoked deli ham
- 1/4 pound sliced deli salami (standard thickness)
- 1/2 pound sliced mozzarella
You will make these each in groups. Start by laying one piece of ham on a cutting board, then add one slice of salami overlapping the ham in the middle. Next, lay one slice of mozzarella on top of the meat in the middle where the slices overlap. Then, starting on one of the short ends, roll the combination up. Finally, gently slice the roll into ½-inch slices and place on a nice platter, cut side up. Repeat this process with the remaining meat. Serve with a fancy mustard for dipping.
