Ingredients

  • 2 teaspoons coconut oil
  • 1 large pear, thinly sliced
  • ¼ teaspoon cinnamon
  • 3 tablespoons honey
  • 1 teaspoon fresh thyme leaves, plus more for garnish, if desired
  • 8 pieces gluten-free bread
  • 1 small wheel brie cheese

Directions

Preheat oven to 400° F. Heat a large pan over medium heat and add coconut oil, sliced pears and cinnamon. Cook pears until tender, 5 to 7 minutes, flipping once.

Add the honey and thyme and stir for about 30 seconds. Remove from heat and let sit.

Line a large baking sheet with parchment paper and place the bread on it. Thinly slice the brie and top each slice of bread with two pieces. Place in oven and bake until cheese is melted, 7 to 10 minutes.

Remove toast from the oven and top each one with 2 to 3 slices of pear. Top with fresh thyme and a drizzle of honey from the pan. Serve immediately.
