You don’t have to dine out to enjoy awesome lettuce wraps. These fresh vegetarian wraps combine a delicious filling featuring chickpeas and avocado with fresh, crisp lettuce.
- 2 large avocados, pitted
- 2 15-ounce cans chickpeas, drained and rinsed
- ¼ cup diced onion
- 1 clove minced garlic
- Juice of 1 lime
- ½ teaspoon salt
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- 8 large romaine lettuce leaves or any lettuce that makes a good cup
Add the avocados to a large bowl and mash with a fork until creamy. Add the chickpeas and roughly mash with a potato masher. Add all the remaining ingredients except the lettuce, and mix until combined.
Spoon desired amount of avocado chickpea salad into each lettuce wrap, and enjoy immediately.
Note: If making ahead for lunch, store the lettuce wraps and chickpea salad separately and assemble just before eating.
