Chewy Date Granola Bars

These Chewy Date Granola Bars are super easy and quick as well. Kids can do every step. The dates make the granola bars sweet, and the hazelnut butter adds a nice nutty flavor. Make sure you don’t over-use the blender. To do this, you might need to add more liquid (honey or water) or mix whatever is in the blender with a spoon until you’re ready to use the blender again.

Ingredients

  • Homemade hazelnut butter
  • 12 ounces hazelnuts
  • ¼ cup water
  • 2 tablespoons honey
  • Granola bars
  • 30 pitted dates
  • ½ cup water
  • 3½ cups gluten-free rolled oats
  • ½ cup hazelnut butter
  • ½ cup mini chocolate chips

Directions

Make the hazelnut butter: In a blender, add the hazelnuts and pulse until finely ground. You might have to stop the blender and shake it to mix up the nuts. When the nuts are finely ground, add the water and the honey, and blend on medium high until smooth.

Wash the blender and make the date mixture. Not only does it taste delicious, but this also makes the granola bars sweet and thick, while also binding the oats together. Add 30 pitted dates to the blender and blend on medium until mixed into a thick paste. Then add the water and blend until fully combined.

Add the date mixture, oats, hazelnut butter, and chocolate chips into a large mixing bowl and mix with a spatula until fully combined.

Grease a glass pan (I used 9 x 13 inches but anything would work, it just depends on how thick you want the bars) and put the batter in. Evenly spread out the mixture, using hands if needed, and chill for 1 hour, then cut the bars.
