This luscious stewed recipe is ridiculously easy and can be prepared with almost any seasonal fruit you have on hand, with the exception of the melon family. Dollop it on dairy-free ice cream, yogurt or oatmeal, spread it on toast or muffins (it’s basically jam), or incorporate it into baked goods. Great for holiday brunches!
Rinse the blueberries and put them in a small pot.
Turn the heat to medium and ‘saute’ the blueberries for a minute. Turn the heat down, cover the pot, and let it simmer for 8-10. Stir occasionally.
Mash the berries gently with a fork or potato masher. Or you can skip this step, depending on your preference.
Taste and add sweetener if necessary. Let cool and store in the fridge.
