The smoky twist in this creamed spinach recipe comes from the cheese and pairs wonderfully with the nutty chicken.
Ingredients
- 10-ounce bag frozen spinach
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup half and half
- 3 tablespoons Parmesan cheese
- ¼ cup shredded smoked Gouda cheese
Directions
Put frozen spinach in a large pan over medium heat. Add olive oil and cook for 5 minutes, until spinach starts to wilt. Add butter, salt and pepper. Continue cooking over medium heat a few more minutes, until spinach is cooked through. Add half and half and all the cheese to the pot. Cook over low heat until cheese is melted and everything is combined. Serve hot.
