Cherry tomatoes are sweet and packed with flavor. This recipe helps them shine with a simple roast to help them get even sweeter. This is a great light side dish for a hearty dish like meatloaf.
- 24 ounces cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- ¼ cup julienned fresh basil
Preheat oven to 400° F. Add cherry tomatoes, olive oil and salt to a large bowl. Toss together and spread out evenly on foiled baking sheet. Roast for 15 minutes. Top with fresh basil and serve hot.
