This simple summery grilled zucchini side dish is a surefire crowd pleaser. Serve it at your next cookout or prepare it for an easy snack on the deck.
Heat the grill to medium heat. Cut the ends off each zucchini and then cut in half, lengthwise, and then in half again. Spread zucchini on a large plate or sheet pan and toss with olive oil, salt and pepper.
Place the zucchini on the grill and cook through until grill marks appear, turning halfway through.
While zucchini is grilling, add all sauce ingredients to a small bowl and whisk until combined. Serve alongside the zucchini.
Cook’s tip: This side dish is best served hot off the grill.
