Macaroni and cheese is a popular side dish that everyone is eager to dig into. Cheese corn presents a fun option that satisfies the need for something cheesy and creamy without gluten.
- 2 12-ounce bags frozen corn
- 11/2 teaspoons salt
- 1 teaspoon pepper
- 8 ounces cream cheese (do not use a low-fat version)
- 3 tablespoons butter
- 1/2 cup chopped bacon (optional)
In a slow cooker, add corn, salt and pepper. Mix together well. Next, cube cream cheese and butter into large chunks and add to slow cooker. Lightly toss everything together, cover and cook on low for 3 to 4 hours.
Serve warm and top with bacon, if desired.
