Cauliflower Rice

Rice is not part of the Paleo diet. Substitutions abound, and cauliflower rice is a popular choice. Use this recipe as a base for fried rice or stir fry, or with a hot bowl of chili.

Ingredients

  • 1 large head cauliflower, prewashed

Directions

Start by cutting the florets off the main stem. Make sure each piece is dried well.

Use a food processor to gently pulse each floret until it forms a rice or couscous consistency. If you don’t have a food processor, a good grater can be used to achieve the same consistency.

Place the finely chopped cauliflower in a large microwaveable bowl and cover well. Microwave on high for 2-3 minutes until desired consistency is achieved. Now serve like you would any other rice dish.
