Paleo Meatloaf

Classic meatloaf is a wonderful winter weeknight treat. This Paleo version may not be the same as grandma’s, but it’s still juicy and packed with tons of flavor.

Ingredients

  • 1 pound ground beef
  • 1 pound ground short rib
  • 1 egg
  • 7 tablespoons Honey Ketchup, divided (see recipe in "Side Dishes" section)
  • 2 tablespoons all-purpose seasoning blend
  • 1 tablespoon coconut aminos (a wheat-free soy sauce substitute)
  • 1 onion

Directions

Preheat oven to 350° F. Start by adding the ground meats, egg, 3 tablespoons of honey ketchup, seasoning blend and coconut aminos to a large bowl. Mix together well. Dice onion and combine with meat mixture. Next, press the meat mixture evenly into a loaf pan. Spread the remaining honey ketchup in a thin layer over the top of the meat. Cover the pan with foil and bake covered for 30 minutes, then uncovered for another 30.
