Ingredients
- 1 sweet yellow onion
- 2 tablespoons olive oil, divided
- 2 pounds ground beef (I used 85% lean)
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 egg
- 3 slices cheese of your choice
- 6 gluten-free hamburger buns
Directions
Heat a large pan on low to medium heat. Slice the onion, then add it to the pan with a tablespoon of olive oil and let them cook, stirring occasionally, for 20-25 minutes, until caramelized.
Heat the rest of the olive oil in a pan on medium heat until you can feel the heat of the oil on your palm from about an inch away.
While the oil is heating up, form the burgers. In a large bowl, add the meat, salt, pepper, parsley, oregano and egg. Mix until well combined. Split the mixture into 6 equal parts and flatten each into a big, flat beef patty. Then cut each slice of cheese into 16 squares and layer 8 squares in the middle of each patty. Now wrap the rest of the patty around the cheese. Make sure none of the cheese is visible from the outside.
Add the burgers to the pan without the onions and let them sit for about 4 minutes before touching them at all. This ensures a good sear on the side of the burger, which is what elevates any burger to the next level. Then flip the burgers and cook for 2-3 minutes.
Serve on your favorite gluten-free hamburger bun, top with the onions and enjoy! Personally, I love ketchup on this, but you can also top these burgers with whatever sounds good to you—guacamole, steak sauce, pickles…the possibilities are endless!
