Cozy Grilled Chicken
This is a flavorful recipe for those of us stuck between summer and autumn. I’ve paired the traditional summer grilling pastime with cozy, warming, anti-inflammatory and immune-building herbs and spices. Throw together the quick, easy marinade on Saturday and enjoy for an easy Sunday dinner along with leftovers for weekday lunches.
- 1 whole pasture-raised chicken, pieced out (you can request the butcher do this)
- Kosher salt and pepper to taste
- 4 cloves garlic, peeled
- 2 tablespoons honey
- 1 2-inch piece fresh turmeric, peeled
- 1 1-inch piece fresh ginger, peeled
- Juice of 1 large lemon
- ¼ cup extra-virgin olive oil
Season the raw chicken pieces with kosher salt and pepper generously on both sides.
Prepare the marinade. Blend garlic, honey, turmeric, ginger, lemon juice and olive oil until smooth.
Marinate the chicken for 24 hours or overnight in a large sealed bag or container, flipping halfway to ensure even coating.
Remove the chicken from the fridge, and allow to come up toward room temperature.
Preheat grill to low heat. For tender meat and crispy skin, cook the chicken skin side up over indirect heat.*
Cook, covered, for 45 minutes to 1 hour, or until the internal temperature reaches about 160 degrees (it will continue to cook once removed).
Rest the chicken for 10 minutes to ensure it remains juicy.
Serve topped with your favorite herbs as garnish (chives are pictured).
*For gas grills, heat the outside burners on low and cook the chicken in the middle. For charcoal grills, heat the coals on one side only and place the chicken on the other.
