The BLT is a classic lunch staple while avocado toast has become a popular breakfast item. This recipe is a wonderful combination of the two.
- 4 slices hearty gluten-free toast
- 1 tablespoon mayonnaise
- 6 slices cooked, thick-cut turkey bacon
- 1 avocado
- 1 vine-ripened tomato, sliced
Start by spreading 1/2 the mayonnaise onto one slice of bread. Cut three pieces of the bacon in half and place on the slice of bread with mayonnaise.
Remove the meat of the avocado and slice each half into thin strips. Arrange half of the avocado slices on top of the bacon. Add three slices of tomato on top of the avocado.
Top the whole thing with another slice of bread. Repeat the same process with the remaining ingredients to make the second sandwich. Press down each sandwich, slice in half and serve.
