This grain-free version of breaded chicken is easy to prepare—you make your own simple nut flour and add a blend of spices. Feel free to add your favorite seasoning or substitute pork or fish.
Ingredients
- 1 cup roasted almonds
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon Italian seasoning
- 1 tablespoon steak seasoning
- 1½ tablespoons coconut sugar (any sugar will work)
- 2 pounds chicken thighs
Directions
Preheat oven to 400° F. Place almonds in a blender or food processor and blend until flour is formed. Add garlic powder, paprika, Italian seasoning, steak seasoning and sugar to blender. Blend until well combined. Place nut mix in large bowl and set aside.
Rinse the chicken and pat dry with a paper towel. Add chicken to the bowl with nut seasoning and coat each piece well. Place each piece of coated chicken on a foiled baking sheet. Bake at 400° F for 40 minutes, flipping about halfway through. Cook until golden brown.
