Watermelon Granita

This granita—a sophisticated version of the popular Hawaiian treat shave ice—combines watermelon, rose wine, lime and basil. For a kid-friendly version, just leave out the wine and double the watermelon.

Ingredients

  • 4 cups watermelon, cut into chunks
  • 1 cup rose wine (sparkling works), chilled*
  • ¼ cup honey
  • 2 tablespoons lime juice
  • Handful chopped basil
  • *If making an alcohol-free version, omit the wine and double the watermelon. Be sure to scrape every 3 hours to avoid freezing solid. If it does freeze solid, simply allow to soften, scrape again with a fork and repeat.

Directions

Combine all ingredients in a blender just until blended.

Freeze 3 hours to overnight in a 9×11-inch pan.

Using a fork, scrape and fluff into a snow cone-like texture.

If desired, store in freezer for up to several days, scraping again before serving.
