Southern Buttermilk Custard Pie
- ½ cup salted butter, melted
- 3/4 cup sugar
- 3 eggs
- 1 tablespoon pure vanilla extract
- 1 tablespoon lemon juice
- 1 cup buttermilk
- ¼ cup one-to-one gluten-free flour
- Nutmeg, for garnish
In a large mixing bowl with an electric mixer, beat together butter and sugar until light and fluffy. Add eggs, vanilla and lemon juice and continue mixing.Gradually add buttermilk and flour and mix until completely combined.
Pour into unbaked pie shell and bake at 350 degrees for 45-60 minutes, or until a knife inserted into center comes out clean.
To serve, garnish with fresh grated nutmeg.
