Peach Chia Pudding

Serves 6

This healthy dessert is dairy, egg, gluten, nut and soy free. To make this recipe vegan, replace the honey with maple syrup.

Ingredients

  • 3 cups fresh peaches, chopped, plus one for garnish
  • 2 cups rice milk
  • ⅓ cup honey
  • ½ teaspoon vanilla
  • ¾ cup chia seeds

Directions

Blend peaches, rice milk, honey, and vanilla in a blender.

When well blended, add chia seeds and pulse once or twice, so they are well mixed with the liquid.

Pour into a Mason jar or Tupperware and place in the fridge for at least 2 hours. Will last 3 days in fridge.

To serve, scoop into individual serving bowls and top with cut-up peaches.
