No-Bake Almond Butter Bars
Looking for a sweet treat? Pack your picnic basket with our gluten-free No-Bake Almond Butter Bars. Topped with dark chocolate, our bars are sure to satisfy that sweet tooth!
- 2 cups almond butter
- 2 tablespoons almond flour
- 2 tablespoons coconut flour
- 2 tablespoons maca powder*
- ½ cup pure maple syrup
- 4 ounces dark chocolate
- ¼ cup salted butter
Prepare a loaf pan by lining it with parchment paper, overlapping sides.
Combine all ingredients except chocolate and butter in a large glass mixing bowl; warm slightly in the microwave if needed to get a soft consistency, and stir together well. Press into prepared pan.
Place pan in freezer to chill for 15 minutes; meanwhile, prepare chocolate layer.
In the same glass bowl (no need to rinse), melt chocolate and butter, 30 seconds at a time, stirring thoroughly and being careful not to burn.
Remove pan from freezer and spread chocolate evenly over almond butter layer.
Return to freezer for 15-30 minutes to allow to completely firm up.
*Note: These will need to stay chilled to keep their firmness. Pack these in an insulated cooler with an ice pack so they’ll hold their shape and texture.
Maca powder is considered to be a “super food” and adds an almost caramel flavor to these bars. If you prefer, substitute cocoa or cacao powder (texture may change slightly).
