Cool down this summer with these easy and fun do-it-yourself ice cream sandwiches. No need to turn that oven on—all you need are gluten-free store-bought cookies and some chocolate ice cream. Watch how a few simple ingredients turn into a bear-y fun-filled cold treat. These cool desserts are guaranteed to put a smile (and some chocolate) on your kids’ faces!
Ingredients
- Chocolate ice cream
- 8 gluten-free store-bought chocolate cookies
- 8 dark chocolate buttons
- ½ cup miniature chocolate chips
- 1 tablespoon melted chocolate, for the "glue"
- 8 edible googly eyes
- 4 gluten-free miniature store-bought cookies
- 4 pink jelly beans
Directions
Scoop out some ice cream and gently sandwich it between two large cookies. (You might want to place the sandwich back into the freezer if the ice cream has become too soft at this point.)
Place two chocolate buttons on the top for the ears. Coat the ice cream edges with the mini chocolate chips. Freeze for another 10 minutes.
Using the melted chocolate, “glue” the googly eyes, mini cookie and jelly beans onto the cookie base. Freeze until the sandwich has set or devour immediately.
