It’s always fun to slip a surprise ingredient into a recipe. No one will guess that this treat contains vitamins, minerals and healthy fat from avocado.
Ingredients
- 1 avocado
- ¼ cup cocoa powder, plus 2 tablespoons for rolling
- 2 tablespoons honey
- 1 tablespoon sunflower butter or almond butter
- 2 tablespoons tapioca starch
Directions
Peel the skin from the avocado, remove the pit and place the avocado into a food processor. Add ¼ cup of the cocoa powder, honey, sunflower or almond butter and tapioca starch. Mix well in the food processor.
Place the mix in the freezer for 20-40 minutes to harden. Remove about 1 tablespoon at a time, roll into a ball and place on a dish. Roll each ball in the remaining cocoa powder to coat.
Chill for an hour in the refrigerator to help harden before eating. Store cold or freeze.
