Grilled Pineapple From The Paleo Diabetes Diet Solution Cookbook
Summer is here, and with warm and sunny days comes the excitement of barbecued meals. For many, barbecuing is likened to an art form — think of all the tools we use and meals we create. - 1 pineapple, peeled
- Coconut oil
- Unsweetened whipped cream or unsweetened coconut whip
1. Cut pineapple into 6 equal rings about 1 inch (2.5 cm) thick. (You can leave the core in or cut it out with a paring knife, but be careful to leave the rings intact.)
2. Grease a preheated grill with coconut oil. Place pineapple rings on the grill, spacing them so that you can flip them easily. Grill, turning once, for 1 to 2 minutes per side, or until you get nice grill marks.
3. Place each pineapple ring on a plate, add a dollop of whipped cream or coconut whip in the middle, and serve immediately.
Serving size: 1/6 of total recipe.
