Serves 4
Who doesn’t love a sweet treat to end a special holiday meal? I first came across this idea as the theme to a food truck and could not wait to replicate it at home. Get creative and try all types of fun toppings and combinations for this Frozen Banana Sundae.
Place frozen bananas in a food processor or blender and blend for 2 to 5 minutes, or until everything comes together. It will start to appear crumbly at first but will eventually form a smooth, soft-serve consistency. If you’re using a blender, be careful not to blend so hard that the banana begins to heat and melt. Once the banana is well blended, place into an airtight container and freeze for at least 2 hours. Scoop the banana into four servings and top with even amount of nuts, berries and coconut topping, if you wish.
