Colorful Fruity Strawberry Kiwi Cupcakes

Ingredients

  • CUPCAKES
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 tsp. vanilla extract
  • 2 eggs, room temperature
  • 1 ½ cups all-purpose gluten free flour
  • 2 tsp. baking powder
  • ¼ tsp. baking soda
  • ½ cup whole milk, room temperature
  • ½ cup strawberry kiwi purée (from about 2 large strawberries and 2 small kiwi)
  • Green and pink food coloring, if desired
  • STRAWBERRY KIWI BUTTERCREAM FROSTING
  • 2 cups unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tsp. vanilla extract
  • 1 tsp. strawberry powder
  • 1 kiwi
  • Pink food coloring
  • Green food coloring

Directions

CUPCAKES 

Preheat oven to 350 degrees. Line a standard cupcake pan with 12 cupcake liners. 

In a standard mixer or mixing bowl, cream the butter along with the sugar and vanilla extract. Add the eggs, one at a time, and combine until smooth.

Sift the flour, baking powder, and baking soda together in a separate bowl.

Place the strawberries and kiwi into a small food processor and purée until you have a smoothie-like consistency. 

Alternate pouring the milk and fruit purée along with the flour mixture and combine until smooth. If coloring the batter, you will want to separate half of it into one bowl to add the pink food coloring to one and green to the other.

Use an ice cream scoop to drop the batter into each well of the cupcake pan, alternating from green to pink, being careful not to overfill the wells of the liners. Bake in the oven for 18-22 minutes or until toothpick runs clean. Allow to cool completely before frosting.

FROSTING 

In a standard mixer or mixing bowl, cream the butter on medium-high speed for 2-5 minutes until smooth. 

Sift the powdered sugar into the bowl and combine. Add the vanilla extract. 

Separate the frosting by taking about ½ a cup for the pink strawberry and transfer to another bowl. Add the pink food coloring along with the strawberry powder and combine. 

Purée the kiwi inside a small food processor and transfer to the buttercream. Add green food coloring and combine. 

Transfer both colors to separate frosting bags with desired piping tips. Decorate with sprinkles and fun fruit shapes. Serve and enjoy!
