Looking for a new way to enjoy your coffee? These delicious cookies are perfect with a cold glass of milk or, for you java fiends out there, a hot cup of coffee.
- 1 cup butter, softened to room temperature
- 1¼ cups granulated sugar
- 3 teaspoons Leaner Creamer
- ⅓ cup coffee
- 2 organic eggs
- 1 teaspoon organic vanilla
- 1 teaspoon salt
- 2 cups gluten-free flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
In a bowl, mix together butter and sugar. Stop mixing when it reaches a fluffy texture.
Mix Leaner Creamer into room temperature coffee.
In another bowl, combine Leaner Creamer mixture, eggs and vanilla until evenly incorporated.
In a separate bowl, combine salt, flour, baking powder and cinnamon.
Slowly add egg mixture to butter mixture until it is evenly combined, being careful not to over beat this mixture.
Chill dough for at least one hour. For best results, chill overnight.
Preheat oven to 350 degrees when ready to bake.
Roll out dough on floured counter to about a half-inch thick. Then, using a circular cookie cutter, cut out circles and line on baking sheet.
Bake for nine minutes, or until golden brown. Enjoy!
