These power bites make a great on-the-go snack. They’re easy to make—you only need three ingredients—and budget friendly. If you like crunch, use a crunchy nut or sunflower butter and then roll the power bites in unsweetened toasted coconut.

Ingredients
- 1 cup natural nut or sunflower butter, such as peanut, almond or cashew
- ¼ cup honey
- ½ cup coconut flour
- 1 cup unsweetened toasted coconut, optional
Directions
Stir together the nut butter and honey in a medium bowl until smooth. Add the coconut flour. Stir until a dough forms.
Scoop dough, about two teaspoons each, and round into balls. For crunch, roll balls in toasted coconut.
Place in a covered container and refrigerate until firm. Store power balls in the refrigerator for up to one week or freeze for a month.
