Apple Chai Spice Breakfast Quinoa


  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 1/4 cup almond milk
  • 1/2 apple, cored and diced
  • 2 tablespoons Earth Balance buttery spread
  • 1 tablespoon chai spice mix
  • 1 tablespoon ground flaxseed
  • 1 tablespoon light cream
  • 3 tablespoons water
  • 1 tablespoon maple syrup
  • 1 teaspoon organic brown sugar
  • 1 tablespoon lemon juice


For quinoa: In a small saucepan bring quinoa, milk, and water to a boil. Then reduce heat cover and simmer quinoa 15 minutes until fluffy.

For apples: In a small skillet over medium-high heat, add butter (1tbsp.) earth balance, water, and lemon juice. Sauté apples for about 4 minutes. Reduce heat. Then add light cream, chai spice mix, and (1 tbsp) earth balance, maple syrup, and brown sugar and continue sautéing until apples become tender, about 5-6 minutes. Stir throughout adding water so that liquid does not cook off.
