Pineapple, Cucumber & Mint Cooler


  • 2 cups fresh pineapple chunks (if using canned, drain before using)
  • 1 cup diced, peeled cucumber
  • 2 tablespoons loosely packed mint leaves plus extra for garnish


Place all ingredients in a high-speed blender and blend until smooth, about 30 seconds. Chill before serving or pour over ice, and garnish each serving with a mint sprig.
