Ginger Lime Hot Tea (with optional Tea Toddy recipe)

Plan an unfussy afternoon tea for a friend or a few with this recipe. This tea has a grown-up twist, though, with our not-so-secret ingredient – dark rum.

Ingredients

  • 1 lime
  • 3 cups water
  • 1 cinnamon stick
  • 1-inch piece fresh ginger, peeled
  • 2 black tea bags (like English Breakfast)
  • 2 tablespoons honey
  • Optional for Tea Toddy
  • 1 ounce dark rum
  • Additional honey

Directions

Using a vegetable peeler or sharp knife, carefully remove just the green part of the lime peel in several long, thin pieces; set aside.

In a small saucepan, combine water, the juice from the lime and spices.

Bring to a boil over medium-high heat, then reduce heat and simmer on low for 5 minutes.

Add tea bags and simmer an additional 3 minutes.

Stir in honey till dissolved, and strain mixture into two large mugs.

Garnish with lime peel.

*To make spiked tea toddy, drizzle additional honey and stir ½ ounce rum into each mug before serving.
