Easy Green Chile and Black Bean Appetizers
2 (4-ounce) cans of Hatch Diced Green Chiles
1½ cups black beans, rinsed
1 cup red peppers, chopped
1 cup yellow peppers, chopped
2 scallions, sliced
Zest of one lime
Juice of one lime
1 cup cilantro leaves, roughly chopped
2 cups Mexican shredded cheese
Set oven to Broil.
In a medium size bowl, add 2 cans diced green chiles including juice.
Then add black beans, red and yellow peppers, scallions, lime zest and juice, and cilantro.
Mix until blended.
Line cookie sheet with tortilla chips.
Add one heaping teaspoon of salsa into individual tortilla chips.
Sprinkle with Mexican cheese blend.
Broil in preheated oven for about 3 minutes or until cheese in completely melted.
