Chick-fil-A Gluten-Free Bun

The Chick-fil-A gluten-free bun, which is made with quinoa and amaranth, is available nationwide. The company had been testing out this gluten-free bun since last spring in Idaho, Washington and Mississippi, but has decided to add it to the menu at every location. News Editor Jennifer Harris tried out the gluten-free bun during its testing run in 2016. Here’s how she found the Chick-fil-A gluten-free bun experience:

Chick-fil-A restaurants are not gluten-free environments, but they have offered several gluten-free options for some time. The grilled chicken and chicken nuggets are prepared separately from the fried chicken. The waffle fries are cooked in canola oil while the fried chicken is cooked in peanut oil. That’s right—the French fries are safe at a fast-food restaurant! Freshly prepared salads with or without chicken, freshly cut fruit cups and yogurt parfaits are also gluten free.

Because so many items are made from scratch, diners can easily customize their orders to exclude ingredients, such as cheese from a salad. The same is true when it comes to ordering ingredients separately from their wheat counterparts, like bacon or sausage sans the biscuit and hash browns prepared in a dedicated fryer.

All that had been missing from the menu is a gluten-free bun, but the wait for that item is finally over. The company says it decided to add it to the menu because customers should not have to sacrifice taste due to dietary limitations.

All About That Gluten-Free Bun

It took about three years and 30 bakeries before Chick-fil-A settled on its gluten-free bun supplier. Food safety and allergen certifications were required just to be considered for the test market. The bakery, whose name hasn’t been released, custom manufactured the bun to complement the grilled chicken breast, and it looks almost identical to its wheat-bun counterpart.

Independent, third-party testing was conducted to ensure the bun is free from cross-contamination and truly gluten free. The bun costs an additional $1.15 and is enriched with vitamins and minerals. While the ingredients haven’t been released yet, we have learned it is made from a blend of chia seeds, amaranth and quinoa, and is lightly sweetened with molasses and raisins.

The buns are freshly baked, individually wrapped and stored frozen. Once thawed, the bun is served sealed alongside the grilled chicken and condiments so the customer actually assembles the sandwich. Guests can request the bun be toasted, but there is only one shared toaster, leaving the bun subject to cross-contamination with wheat.

How Does It Taste?

I had the chance to try the bun at a small test market here in Georgia. One of the largest foodservice buns I’ve ever seen, it’s soft right out of the package with a slightly sweet smell and hearty flavor. The bun holds up well to Chick-fil-A’s large grilled breast piled with lettuce, tomato, pickles and mayonnaise without any crumbling or breaking.

Why Shirataki Noodles Will Be Your New Best Friend

Have you ever dreamed of noodles that are not only gluten free, but also contain no calories? Well, look no further! Shirataki noodles are a great food for anyone with food allergies, as they are vegan and gluten free, and naturally contain no calories.

Shirataki noodles, otherwise known as “yam noodles,” come from a yam-like tuber named Devil’s Tongue. The process to make these noodles involves removing starch from the tubers, then mixing the starch with water and limewater to create something called konnyaku. This substance is then shredded to create the shirataki noodles.

When cooked, the noodles have a slightly gelatinous texture and very little taste, so they are best accompanied by bold flavors or cooked in a robust broth. These mild noodles will take on the taste of whatever you cook them with, opening up endless possibilities for you to create unique and personalized flavor profiles!

The Paleo Diet: Eating Like a Cavewoman

Diane Sanfilippo, New York Times-bestselling author of Practical Paleo and The 21-Day Sugar Detox, did not start out with a passion for nutrition. In fact, it wasn’t until college, after gaining significant weight when she stopped playing sports, that she realized she needed to change the way she approached food. And it did not take long for Sanfilippo to comprehend the difference between dieting and eating better.

“I lost the weight eating a low-fat diet, but I didn’t get any healthier,” says Sanfilippo. “Sure, I was in smaller clothes, but still suffered with IBS, chronic sinus infections, new cavities at almost every dental checkup and a glasses/contacts prescription that was getting stronger and stronger year after year. It wasn’t until I discovered a real food approach in Paleo that I was able to turn my common-but-not-normal health issues around through improving my diet.”

In the beginning…

In 2010 Sanfilippo—at that point working out regularly at CrossFit and studying holistic nutrition—was invited to attend her first Paleo seminar. It was there that she had her “A-ha!” moment: she had finally found an approach to eating that made sense for turning her health around.

“The two greatest ben­efits to eating Paleo are well-regulated/balanced blood sugar and improved digestive function,” Sanfilippo explains. “When we remove refined, nutrient-poor foods from our diet and include more quality proteins and healthy fats, our blood sugar levels naturally begin to regulate.”

The Paleo debate

The Paleo diet focuses on avoiding modern processed foods as well as foods that humans began eating after the advent of modern agriculture, including certain grains, poor-quality dairy products, beans, legumes and artificial sweeteners. However, many critics have cited these wide-ranging restrictions as a major reason for the diet not being sustainable. Sanfilippo, on the other hand, finds that with a bit of creativity and some simple ingredient swapping, the Paleo diet can be made to fit anyone’s lifestyle.

“I don’t personally find recipe creation while eating Paleo to be restrictive, but it certainly can feel that way if you’re used to cooking a lot with non-Paleo ingredients,” Sanfilippo says. “It’s pretty easy to make lots of swaps for old favorites, like coconut aminos instead of soy sauce or almond flour instead of wheat flour.”

Updates and additions

Her second edition of Practical Paleo contains 40 new recipes and focuses on ingredients that Sanfilippo feels people use most while cooking, such as ground meats and chicken breast. She also added more egg-free breakfast ideas, smoothies and slow cooker–friendly meals. The recipes now feature color-coded
allergen icons along with the notes on swaps for common allergens such as eggs, nuts and nightshade vegetables.

“The second edition of Practical Paleo is my way of giving the community my best,” Sanfilippo says. “After four years and over half a million printed copies sold, I needed to be sure that the book people are sharing with their most cherished friends and family members is still as relevant and up to date as it originally was, and that it is something they can be as proud to share now as they were the original.”

Wonder woman Padma Lakshmi dishes on her new collection of vegan and gluten-free rice dinners.

Padma Lakshmi, 45, is an internationally known author, model and tv personality. She has hosted Bravo’s Emmy-winning “Top Chef” since 2006, and recently published her own memoir, “Love, Loss and What We Ate.” Lakshmi is also the co-founder of the Endometriosis Foundation of America.

PADMA LAKSHMI has a lot on her plate, both literally and figuratively. She is known worldwide as an actress, model, food expert, award-winning author and host of Bravo’s Emmy award-winning Top Chef. Lakshmi also co-founded the Endometriosis Foundation of America with Tamer Seckin, M.D.

Yet all of these accomplishments have not slowed Lakshmi down, as she continues to expand her influence on the culinary world by creating her own brand of gluten-free rice dishes: Padma’s Easy Exotic. The inspiration for
her collection did not begin in some fancy top-chef kitchen, though, but right in her own home.

shutterstock_140074369“I began freezing rice in individual portions for myself and for my daughter after dinner parties. Because the natural medium for cooking rice is steam, it reheats beautifully in the microwave,” said Lakshmi. “It started as an easy way for me to feed my family, and I saw it being potentially useful for other families as well.”

Her line of frozen rice and lentil entrees are now available in stores across the country. Lakshmi pulled from many different influences when creating the flavor profile of each meal.

“Some of the recipes, like the Madras Lemon Rice, are family recipes that have been passed down for generations. My grandmother used to make this dish every weekend in Chennai,” said Lakshmi. “Other selections, like the Spicy Black Beans & Rice, for example, are inspired by my travels. I’ve
always loved the spicy, layered flavors of Latin and Carib–bean cuisine.”

Aside from the delicious flavors, all of the rice collection dishes are vegan and gluten free, making them accessible for people with various food allergies and restrictions.

“Most of my family is vegetarian, and so cooking for those diets comes easy and naturally to me,” said Lakshmi. “I just wanted to serve as many people as possible. There’s no need to add gluten to rice.”

Lakshmi’s ultimate goal with this collection is to help everyday families get nutritious meals on the table without a lot of hassle. As a mother first and an international celebrity second, she is aware of how difficult that can sometimes be.

“I want my rice and lentil selections to be helpful and a healthy part of meals families can make on a daily basis. For parents who work full time, this is an easy way to get food on the table on a weeknight.”

Cheerios Launches Two New Gluten-Free Flavors

Gluten-free Strawberry Cheerios, which use real strawberries from California, are launching this spring and already popping up in stores across the country.

Spice flavor, which won’t be hitting shelves until fall. According to General Mills, the expected launch date for this festive flavor is this upcoming Labor Day.

 

Just because you’re gluten free doesn’t mean you need to get stuck in a rut, so switch it up and bring some refreshing new flavors to your morning routine. These fun new variations on a beloved classic are something the whole family can enjoy; just make sure you try them before they’re gone!
