We also have fantastic recipes for lunchbox treats! These snacks will fuel your gluten-free student through the afternoon:

Dunkin’ Donuts’ Gluten-Free Brownie

The new Dunkin’ Donuts gluten-free brownie has been available in stores nationwide since July 30. Part of the new Dunkin’ Run menu featuring $2 snacks, the brownie is the chain’s first gluten-free item.

According to Dunkin’ Donuts’ U.S. Chief Marketing Officer Tony Weisman, “We…recognize the importance of providing alternative choices for people with dietary restrictions or who choose a gluten-free diet, which is why we’re pleased our new menu offers guests a gluten-free Fudge Brownie, which is so chewy and delicious we think everyone will love it.”

Certified gluten-free by the Gluten Intolerance Group’s Gluten-Free Certification Organization, the treat comes
individually wrapped, avoiding any cross-contamination risk.

How does it taste?

Never one to shirk my responsibilities as editor of a gluten-free publication, I headed to the closest Dunks—I live in Massachusetts; there is always one nearby—to try it for myself. I was a little hesitant to take the first bite. I’ve had my share of dry, crumbly and otherwise-unpleasant gluten-free baked goods. My initial taste of the Dunkin’ Donuts gluten-free brownie pleasantly surprised. Soft and gooey, it has a fudge-y consistency and delivers tons of chocolate-y flavor. I also didn’t notice any unpleasant aftertaste—always something to be wary of when it comes to gluten-free goodies. I probably could have split it and saved half for later as it’s pretty dense, but not unpleasantly so.

If you’re splurging on a brownie, you’re probably not expecting an overly healthful experience. To that end, be prepared to add the brownie’s 350 calories, 34 grams of sugar and 16 grams of fat to your nutritional intake for the day.

Infant Study on Development of Celiac Enrolling

Help Identify, Predict and Prevent Celiac

The MassGeneral Hospital for Children Center for Celiac Research and the Celiac Program at Harvard Medical School have launched a research study to understand the many factors that contribute to the development of celiac.

The CDGEMM (Celiac Disease Genomic Environmental Microbiome and Metabolomic) Study is aimed at understanding the role that our genes, gut microbiome and environmental factors play in the development of celiac.

Researchers, led by Dr. Alessio Fasano, are hoping the study will help create a model to identify a pattern of gut bacteria (microbial signatures) and environmental factors that could help predict who will develop celiac before it happens. Once able to predict celiac development, their goal is to prevent it by producing treatments based off of this work.

Could your infant take part?

Researchers have enrolled 150 babies so far and are looking for a total of 750 infants from the U.S., Italy and Spain to participate. Infants up to 6 months of age who have a first-degree relative (parent or sibling) with celiac are eligible for the study. If you are currently pregnant and your soon-to-be infant will fit these criteria, you can even begin the enrollment process before birth. They study is recruiting from all over the U.S., as well as at centers in Italy and Spain, and follows children from the time of enrollment until they turn 5 years old.

Here is what study participants can expect:

  • Collection of blood and stool samples from your child throughout the study. Each time blood is drawn it will be tested for the antibodies used to diagnose celiac. Thus, by taking part in the study, each child will be monitored closely for celiac, which allows for early detection and treatment if necessary. In addition, genetic testing will assess whether each child has the genes compatible with celiac.
  • Parents will keep a diary of their infant’s antibiotic use and dietary history for the first year of life.
  • Parents will answer questions about their infant’s medical and social history approximately every six months.
  • Forms can be completed securely online.
  • Study visits can be conducted at the center where participants enroll or at the child’s pediatrician’s office.
  • Everything is free of charge.

Finally, participants have an active firsthand role in groundbreaking science and around-the-clock access to the CDGEMM study team, comprised of experts in the field of celiac. Participants are also welcomed into a community of like-minded families who want to help advance our knowledge of celiac.

Parents who are interested in enrolling their infant can visit the study’s website at www.cdgemm.org to see how their little ‘GEMM’ can help make celiac history. To enroll or inquire about enrollment, contact a participating center nearest you.

Want more information on celiac and kids? Check out our Kids section.

A Paleo Primer

Based on the eating habits of our hunter-gatherer ancestors of the Paleolithic period, the Paleo diet generally includes vegetables, fruits, meat, seafood, nuts and seeds. It does not allow grains, dairy, legumes and certain vegetable oils (such as soy, cottonseed and corn). The diet is based on the idea that the human body may not have adapted over time to process the crops grown through “modern” agriculture.

Paleo vs. Gluten Free

While our Paleolithic ancestors’ diet couldn’t be simpler, the differences between the Paleo diet and the gluten-free diet can lead to confusion. Basically, everything that is Paleo is acceptable on a gluten-free diet. But not all gluten-free items are permitted on the Paleo diet.

Although whole grains—including gluten-free whole grains—provide nutritional benefits, some people, both with celiac disease and without, feel better when they avoid whole grains. The Paleo diet presents an alternative for those who continue to deal with symptoms in spite of adopting the gluten-free diet.

paleoYou may have heard about concerns that the Paleo diet lacks in fiber, calcium and vitamin D while containing too much fat. Rest assured, you can take steps to address these issues. Vegetables provide fiber and protein, and almonds along with leafy greens such as broccoli and cooked kale can supply the calcium and vitamin D typically supplied by dairy foods. With its emphasis on healthy lean meats and non-starchy vegetables, the diet differs from other low-carb plans that include too much fat and not enough protein.

The great Paleo debate

Even within the Paleo community, debate rages on  about which foods are Paleo and which are not. In his book The Paleo Diet—considered the bible of Paleo eating—Loren Cordain, Ph.D., labels bacon a food to avoid, but most Paleo chefs use it often in their dishes. Cordain also advises staying away from starchy vegetables such as potatoes, sweet potatoes, yams and tapioca, yet most Paleo followers eat these foods and consider tubers a part of the Paleo diet.

While the name “Paleo diet” indicates a single way of eating, there are actually many versions, and you have to decide whether or not to eat certain foods as you go along. But there’s universal agreement that vegetables, fruits and lean meats are indeed Paleo. Many Paleo followers begin simply with a diet of vegetables and animal protein—the version recommended by Cordain.

As you well know, there’s no one-size-fits-all diet. Everyone has to figure out which foods work best for their body.
